The new net of Smart-Restaurants 100% Made in Liguria comes directly from Recco.
We handmake many typical Ligurian focaccia following the ancient recipes of our territory and using only selected ingredients.
The puff pastry of our focaccia with cheese is hand-stretched as per tradition, and is made with Italian flour and stracchino cheese. The chickpea farinata is a vegan product made with Italian chickpeas flour.
The making of our Genoese “fügassa” takes 3 raising phases, the traditional “holes” are made by using the fingertips, and are sprinkled on top with olive oil and coarse salt.
